Appreciate this article as I was unaware of this particular bread. There is also a company I am familiar with called Berlin Bakery that makes spelt bread with very few ingredients. They are worth checking out for this discussion. The bread is normally stocked in the freezer section of Whole Foods.

And I appreciate your comment, Brother Taz, as I was unaware of the bread you mentioned. I just took a quick look at their website, and their Whole Grain Spelt Bread seems to be a great choice for those who eat bread. Their explanation (https://www.berlinnaturalbakery.com/blogs/bnb/the-big-organic-question-we-re-not-afraid-to-answer) for the absence of the USDA label also seems convincing.
